Steps to prepare avocado oil

Cut the avocadoes in half lengthwise, remove the stone and extract the pulp, by scraping gently the inside of the peel, of which we can get rid at this occasion. At a more advanced level, avocado oil is extracted from the pulp and also from the stone, but we will learn today an easier way to prepare it only with the pulp well peeled.

Put the avocadoes cut into pieces in the food processor (or blender, or chopper) and prepare a puree, as homogeneous as possible. If you notice that there still remain apparent pieces, keep crushing.

The next step to prepare avocado oil is to dry the obtained puree. For this you have to spread it as well as possible, using a spatula, on a baking tray. Try not to leave piles to make the drying faster (use several trays if it is necessary). Put in the oven slightly warm (about 50°C or 120°F) in order not to burn it, with some air if your oven has this function, during a few hours. Ensure that the preparation darkens but does not toast or brown too much, because it would burn and this would damage the oil. Turn on and off the oven as many times as necessary. The result has to be coffee-colored and, by touch, you will notice that your fingers are covered with oil.
